Fruit scones
Whip these up in 15 minutes! I have them with butter, jam and a dollop of cream.
Ingredients
350g self-raising flour, plus more for dusting
85g butter
175ml milk
3 tbsp caster sugar
1 tsp baking powder
100g raisins/ nuts/dried fruit, your choice!
¼ tsp salt
1 tsp vanilla extract
beaten egg to glaze
jam and clotted cream, to serve
Method
Heat oven to 200C fan and pop in a baking tray.
Mix flour into a large bowl with the salt and baking powder.
Using your hands, add the butter and rub until the mixture is crumbly.
Stir in the sugar.
Heat the milk until it is warm, but not hot (microwave or stove).
Add the vanilla and set aside for a moment.
Make a well in the dry mix, then add the liquid and raisins or mix of your choice and combine.
Grab a handful of flour for your worktop and lay the dough out.Lots more flour on top and for your hands and fold the dough a couple of times until its smoother.
Make a number of evenly shaped scones about 5cm wide
Brush the tops with beaten egg, then place onto the hot baking tray.
Bake for 10 mins until risen and golden on the top.
